  • 2 cups shredded rotisserie chicken
  • 12 oz frozen cauliflower rice
  • 4 strips bacon cooked and chopped
  • 1 teaspoon herb and garlic seasoning or Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese room temperature
  • 1/4 cup heavy cream
  • 1 cup shredded cheese
KETO Chicken Cauliflower Rice Casserole


  1. Preheat oven to 350F (180c)
  2. Grease or spray a casserole dish with nonstick spray
  3. Mix together all ingredients except for 1/2 cup of the shredded cheese
  4. Add to casserole dish
  5. Top with remaining cheese
  6. Bake for 20 minutes until hot and bubbly
